A Healthy Recipe for the Silly Season


Hello beautiful people!

I can't believe it's December already. I'm so excited about Christmas, it's my absolute favourite time of the year. It is such a busy time though and with all the Christmas shopping, parties and general pre-Christmas build up, it's all too easy to put our wellbeing at the bottom of the priority list. Try to take the time for a healthy breakfast - you'll have much more energy during the day and won't be tempted to reach for the biscuit tin! To kick start your December I thought I'd share a recipe with you. I hope you manage to squeeze this in at some point during December, amongst all the chocolate, mince pies and mulled wine!

Winter Spiced Porridge with Berries

I love porridge. On a cold Winter's day, it's like a big, warm hug in a bowl. I made this porridge recently, just using whatever I had in the fridge and pantry at the time, and it was delicious! The great thing about porridge is that you can adapt it to suit you, using whatever ingredients you have, and leaving out anything that doesn't float your boat! I'm not giving precise measurements here, mainly because I didn't measure anything out when I made it - OOOPS... I'll try and be more organised with future recipes.

Ingredients:-

Organic whole oats (I used roughly a couple of handfuls)

Almond milk (enough to generously cover the oats)

Mixed spice (to taste)

Milled flaxseed (2 tbspns)

Pecan nuts, roughly chopped

Flaked almonds

Mixed seeds

Blackberries (or other berries)

Pomegranate seeds

Maple syrup

Peanut butter

Method:-

Place the oats, flaxseed and mixed spices in a saucepan and pour the almond milk on top. Cook on a medium heat, stirring regularly, until the milk is absorbed and the oats are lovely and thick and creamy. Place the porridge in a bowl and top with the berrries, pomegranate seeds, mixed seeds and chopped nuts. Add a dollop of peanut butter (or other nut butter), a drizzle of maple syrup.
