A New Recipe You Have to Try

When I posted this photo in my last newsletter several people asked me for the recipe, so here it is! I hope you enjoy - Bubbling Green Cheesy Beans...


1 700g jar of butterbeans

1 head of broccoli

5-6 cavolo nero stalks

1/2 a white onion

4 cloves of garlic

300ml veg stock

100 double or heavy cream

1 tsp dijon mustard

1 tbsp nutritional yeast

50g grated Parmesan

50g grated cheddar


Pre heat the oven to 190C.

Saute sliced onion and broccoli stalk in olive oil for 5 minutes then add garlic and saute for another minute. Pour in stock and cream and let simmer for 5 mins before removing from the heat.

In a large pot of boiling water on a medium heat, submerge broccoli florets and cavolo nero for 2 minutes. Remove and separate, putting the cavolo nero into a blender along with the creamy onion mixture, mustard and nutritional yeast, blend until smooth. In the pan that the creamy onion mix was in, pour beans and broccoli florets and then cover with the green sauce. Mix well and top with cheese then bake in the oven for 10 minutes or until bubbling and golden.
